Crispy Asian-Spiced Shrimp

- 2/3 cup white or brown rice flour
- 2 lb extra large shrimp, peeled with tails on
- 2 cups veg oil
- Asian Spiced Sea Salt (McCormick)
Instructions
- Place rice flour in a zip top bag. Add shrimp and shake until evenly coated.
- Meanwhile, heat oil over high heat in a 10-12 inch deep skillet or wok. When a break cub dropped in the oil sizzles and browns in 60 seconds, the oil is hot enough. Shake off excess flour and drop shrimp in small batches. Fry about 2 minutes until golden, crispy and just cooked thgrough.
- Remove w/ slotted spoon to paper towel. Serve immediately with a small bowl of seasoned salt. Fry remaning shrimp the same way, checking the oil temp often.
