Ginger Salmon with Peaches

List of Ingredients
- 1 tbl rice vinegar
- 1 tbl grated fresh ginger
- 1 tsp thyme
- 4 tbl EVOO
- 4 6-ozSalmon steaks
- 2 med. red onions ,wedged
- 3 peaches,wedged
Instructions
- Heat grill med-high. In bowl combine vinegar, ginger, thyme, 3 tbl oil, salt and pepper.
- Season Salmon with 1/2 tsp salt & pepper. Toss onion, peaches and 1 tbl oil, salt & pepper.
- Grill Salmon and onion until Salmon is opaque & onions tender, 5-6 minutes per side.
- After flipping Salmon put peaches on grill, cook tender, 3-4 minutes per side. Drizzle with vinegairette and serve with onion and peaches.
