    Ginger Salmon with Peaches

    List of Ingredients


    • 1 tbl rice vinegar
    • 1 tbl grated fresh ginger
    • 1 tsp thyme
    • 4 tbl EVOO
    • 4 6-ozSalmon steaks
    • 2 med. red onions ,wedged
    • 3 peaches,wedged


    Instructions


    1. Heat grill med-high. In bowl combine vinegar, ginger, thyme, 3 tbl oil, salt and pepper.
    2. Season Salmon with 1/2 tsp salt & pepper. Toss onion, peaches and 1 tbl oil, salt & pepper.
    3. Grill Salmon and onion until Salmon is opaque & onions tender, 5-6 minutes per side.
    4. After flipping Salmon put peaches on grill, cook tender, 3-4 minutes per side. Drizzle with vinegairette and serve with onion and peaches.
