Honey Glazed Salmon

4 thin skinless salmon fillets
Salt & Pepper
1 tsp. ground cinnamon
3 tbl. corn oil
1/2 cup honey
4 carrots peled nad thinly sliced
5 cups chicory or curly endive thinly sliced
2 tbl. white vinegarRecipe
1. Preheat broiler. Season the salmon with salt and pepper and place on the broiling pan.
2. In a small bowl, mix the cinnamon and honey. Lightly coat the salmon with this mixture, reserve the rest. Broil salmon for 5 minutes, or until slightly charred. Keep warm.
3. Meanwhile, heat oil in large saute pan until hot but not smoking. Add carrots and cook 2 minutes, stirring frequently. Add chicory and season with salt and pepper. Cook until wilted and tender.
4. Add vinegar and reserved honey mixture to the pan and toss to coat the carrots and chicory.
5. Arrange a bed or carrot and chicory mixture on plate and top with salmon.
