Salmon Steak with Pineapple&Corn

List of Ingredients
- 4 ears corn, husked
- Four 1-in thick slices peeled fresh pineapple
- 1/2 cup EVOO
- 1 tbl finely chopped chipotle chilies in adobo
- 2 tsp apple cider vinegar
- Juice of 1/2 lime
- 1 tsp sugar
- Salt
- Four 1 1/2-in salmon steaks
- 1/4 cup chopped cilantro
- 1 tbl chopped red onion
Instructions
- Preheat the grill to med-high. Grill corn, covered, turning every 2 minutes until browned. About 8 minutes. Transfer to a plate.
- Grill the pineapple slices until grill marks appear, about 4 minutes oer side. Transfer to a cutting board and chop corsely. Put in a bowl, cut the corn kernals from the cob and add to the bowl.
- In a med bowl, wisk together oilive oil, chilis, vinegar, lime and sugar. Season with salt. Brush the salmon with the vinegrette. Grill, turining once, 8 minutes for med-rare.
- Stir the cilantro and the onion into the corn and pineapple. Stir in the vinegrette and serve atop the salmon.
