    Salmon Steak with Pineapple&Corn

    List of Ingredients


    • 4 ears corn, husked
    • Four 1-in thick slices peeled fresh pineapple
    • 1/2 cup EVOO
    • 1 tbl finely chopped chipotle chilies in adobo
    • 2 tsp apple cider vinegar
    • Juice of 1/2 lime
    • 1 tsp sugar
    • Salt
    • Four 1 1/2-in salmon steaks
    • 1/4 cup chopped cilantro
    • 1 tbl chopped red onion


    Instructions


    1. Preheat the grill to med-high. Grill corn, covered, turning every 2 minutes until browned. About 8 minutes. Transfer to a plate.
    2. Grill the pineapple slices until grill marks appear, about 4 minutes oer side. Transfer to a cutting board and chop corsely. Put in a bowl, cut the corn kernals from the cob and add to the bowl.
    3. In a med bowl, wisk together oilive oil, chilis, vinegar, lime and sugar. Season with salt. Brush the salmon with the vinegrette. Grill, turining once, 8 minutes for med-rare.
    4. Stir the cilantro and the onion into the corn and pineapple. Stir in the vinegrette and serve atop the salmon.
