List of Ingredients
CONFIT
5 lb. yellow onion
1 tbl. garlic
1/2 cup olive oil
.75 cup Balsamic Vinegar
2 tbl. brown sugar
1 tbl. parsley
Salt & Pepper
FLATBREAD
Sweet Onion Confit
4 slices panchetta, crumbled
Crumbled Gorgonzola
Handful toasted walnutsRecipe
CONFIT
1. Julienne onion and saute on medium heat in olive oil until clear.
2. Add garlic and saute until caramelized, add Balsamic and sugar and mix well, reduce until evaporated.
3. Season to taste.
ASSEMBLY
1. Put confit ontop of pre-cooked flat bread.
2. Top with panchetta, toasted walnuts and Gorgonzola cheese.
3. Bake to finish for 2-3 minutes.
