Roast Lemon-Herb Chicken

List of Ingredients
- 2 tsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp seasoning salt
- 1/2 tsp mustard powder
- 1/2 tsp black pepper
- 1 4-lb whole chicken
- 6 tbl lemon juice
- 1 tbl oil
- 1/3 cup water
Instructions
- Preheat oven to 350 degrees
- Mix together dry seasonings. Pat chicken dry inside and out. Place chicken breast side up in a 9x13 baking dish and sprinkle 1 1/2 tsp of mixture into cavity.
- Stir juice and oil in bowl. Drizzle evenly over chicken and sprinkle remaining seasoning mix.
- Pour water into dish.
- Roast chicken, basting several times with pan juices and adding more water if juices begin to burn. About 1 1/2 hours.
- Transfer chicken platter and let rest 20 minutes.
