Heart of Palm w/ Mandarin Dressing

Recipe Introduction
You can find hearts on palm canned from either Florida or Brazil, Brazil is more expensive, but the quality is a little better for more complex dishes. For this just use the Florida canned hearts.
List of Ingredients
2 oz. heart of palm, sliced
3 oz. grilled pineapple
3 oz. field greens
.25 bunch watercress
1 tbl. scallions
2 tbl. mandarin oranges
.5 oz. julienne carrots
1 oz. spiced pecans
Mandarin Orange Dressing Recipe
1. Toss the greens, scallions, carrots and oranges in a large bowl. Add a few teaspoons of dressing and toss to coat.
2. Lay grilled pineapple on a presentation plate. Top with the mixed salad, followed by the pecans and last sliced heart of palm
SPICED PECANS
2 qts. water
2 qts. sugar
1 qts. pecans
Cayenne Pepper
1. Make a simple syrup with the water and sugar. Simmer and reduced until it is golden and reduced about half.
2. Toast the pecans and set aside to cool.
3. Add 1 tbl. of cayenne pepper to the syrup.
4. Add the pecans and simmer 15-20 minutes.
5. Strain the pecans from the syrup and deep fry the pecans for 20 seconds to 1 minute.
6. Toss with a little cayenne pepper, lay flat in a single layer to cool.
