    Moroccan Lamb Salad w/ Carrots & Mint

    List of Ingredients


    • 2 boneless lamb leg steaks
    • 2 tbl olive oil
    • 2 garlic cloves, chopped
    • 1/4 cinnamon
    • 1/8 tsp cayenne pepper
    • 1/4 cup mint sprigs
    • 2 tbl lemon juice
    • 1 lb carrots
    • 1/4 cup golden rasins
    • 2 scallions, chopped


    Instructions


    1. Heat grill med high. Rub lamb with oil andgarlic, salt & pepper. grill 4-5 minutes per side.
    2. Rest 5 min, cut intopieces. Wisk mayo, lemon juice, spices andsalt. Peel carrots into long strips(like linguine). Add mint, rasins,scallions and toss with dressing. Serve topped with lamb.
