Spring Greens w/ Parmasean Crisps

List of Ingredients
- 1/2 cup shredded parmesean
- 2 1/2 Tbsp lemon juice
- 2 tsp dijon mustard
- 1/4 tsp freshly ground pepper
- 1/4 cup olive oil
- 2 heads Boston lettuce, torn into bite-size pieces
- 2 cups torn frisee
- 2 Tbsp each snipped chilves and dill
Instructions
- Heat oven to 375. line a baking sheet with nonstick foil. Spoon parmesan into eigth 3-in rounds, 1 Tbsp each, 1-in apart on the sheet. Bake 6-7 minutes until golden. Curl by draping over rolling pin while hot and letting cool long enough to retain curl.
- Whisk lemon juice, mustard and pepper. Slowl whisk in oil until mixed.
- Toss lettuce and frisee with herbs nad dresing nad serve with crisps.
Final Comments
Dressing and crisps can be made up to two days in advance.
