    List of Ingredients


    • 3 tbl butter
    • 6 scallions
    • 1 garlic clove, crushed
    • 1/4 cup flour
    • 2 1/2 cups veg stock
    • 2 ripe avocados
    • 2-3 tsp lemon juice
    • Pinch of lemon rind
    • 2/3 cup milk
    • 2/3 cup light cream
    • 1 1/2 tsp chopped mint
    • Salt & Pepper


    Instructions


    1. melt butter in saucepan. Add scallions & garlic and fry over lot heat, stirring occasionally for about 3 minutes until soft and translucent.
    2. Stir in flour and cook 1-2 minutes. Gradually stir in the stock then boil. Simmer gentally.
    3. Peel avocados, discatd the pits and chop coarsley. Add to soup with lemon juice and rind, add seasonings. Cover and simmer 10 minutes.
    4. Cool soup slightly then press through a strainer or process until smooth.
    5. Stir in cream and milk, adjust seasonings if needed and then add mint.
    6. Cover and chill thouroughly.
