Avacado & Mint Soup

List of Ingredients
- 3 tbl butter
- 6 scallions
- 1 garlic clove, crushed
- 1/4 cup flour
- 2 1/2 cups veg stock
- 2 ripe avocados
- 2-3 tsp lemon juice
- Pinch of lemon rind
- 2/3 cup milk
- 2/3 cup light cream
- 1 1/2 tsp chopped mint
- Salt & Pepper
Instructions
- melt butter in saucepan. Add scallions & garlic and fry over lot heat, stirring occasionally for about 3 minutes until soft and translucent.
- Stir in flour and cook 1-2 minutes. Gradually stir in the stock then boil. Simmer gentally.
- Peel avocados, discatd the pits and chop coarsley. Add to soup with lemon juice and rind, add seasonings. Cover and simmer 10 minutes.
- Cool soup slightly then press through a strainer or process until smooth.
- Stir in cream and milk, adjust seasonings if needed and then add mint.
- Cover and chill thouroughly.
