    Chilled Spiced Pear Bisque

    Nice, chilled start to a meal.


    List of Ingredients


    • Spice Sachet
    • 6 Ripe Pears
    • 1 1/3 cups White Wine
    • 1 (3-in) Piece lemongrass
    • 1/4 Cup + 2 Tbsp Sugar
    • 1/4 loaf French bread
    • 1 Tbsp butter, melted
    • Creme Fraiche


    Instructions


    1. Wrap sachet ingredients in cheesecloth; tie with string.
    2. Peel, half, and core pears. In 4-qt. saucepan, palce sachet, pears, wine, lemongrass, 1/4 cup sugar, and 2 cups water, heat to boiling over high heat. Reduce heat to low; cover and simmer 30 minutes or until pears are very soft.
    3. Remove pan from heat; discard sachet and lemongrass. Puree mixture in blender until very smooth. Cover and refrigerate at least 2 hours until cold.
    4. Meanwhile, preheat oven to 350 degrees. Cut bread into 1-in cube. In 9x9" pan. Toss bread with butter. Bake 20 minutes; toss with cinnamon and 2 Tbsp sugar.
    5. Serve soup with creme fraiche and croutons.
