    List of Ingredients


    • 2 fresh butternut squash
    • 2 tbl coconut oil
    • 1 tbl minced garlic
    • 1 large yellow onion, diced
    • 1 small yellow pepper, chopped
    • 1 small can coconut milk
    • Salt & Pepper
    • Shredded unsweetened coconut


    Instructions


    1. Cut squash in half and scoop out seeds.
    2. Use knife to peel away the skin, chop into cubes.
    3. Heat oil in skillet on medium, cook garlic 1 minutes.
    4. Sir in onions and pepper, cook 3 minutes.
    5. Add squash and cook 2-3 minutes.
    6. Transfer to crockpot and season with salt and pepper to taste.
    7. Cover and cook on high for 3 1/2 - 4 hours.
    8. Turn off crockpot and puree soup. Whisk in milk and serve with shredded coconut.
