Fast French Onion Soup

List of Ingredients
- 2 large sweet onions, thinly sliced
- 1 cup dry red wine
- 2 (14.5 oz) cans beef broth
- 5-oz bag seasoned croutons
- 4 thick slices Swiss cheese
Instructions
- In a deep skillet heat 2 tbl. EVOO over med heat. Add the onion and cook, stirring occasionally, until translucent and soft. About 15 minutes.
- Add the wine and bring to a boil. Pour in the broth, lower heat to a simmer for about 10 minutes.
- Season with pepper, preheat broiler. Divide the soup among 4 oven proof bowls. Top each with croûtons and a slice of cheese.
- Set bowls on a baking sheet under the broiler until the cheese is bubbly and golden-about 1 minute.
