Gingered Squashed & Pear Soup

- 1 chopped onion
- 1 Tbsp grated ginger
- 1 large butternut squash, peeled and seeded in chunks
- 2 ripe pears
- 4 cups chicken broth
- S&P
Instructions
- Saute onion and ginger in a little oil in pot until onion is tender. Add squash, pears, broth and season to taste.
- Bring to boil, cover and reduce heat to simmer, 15 minutes until quash is tender.
- Cool slightly then puree until smooth.
- Garnish with sour cream.
