    Gingered Squashed & Pear Soup

    List of Ingredients


    • 1 chopped onion
    • 1 Tbsp grated ginger
    • 1 large butternut squash, peeled and seeded in chunks
    • 2 ripe pears
    • 4 cups chicken broth
    • S&P


    Instructions


    1. Saute onion and ginger in a little oil in pot until onion is tender. Add squash, pears, broth and season to taste.
    2. Bring to boil, cover and reduce heat to simmer, 15 minutes until quash is tender.
    3. Cool slightly then puree until smooth.
    4. Garnish with sour cream.
