Red Pepper & Chili Soup

- 8 oz red bell pepper, seeded and sliced
- 1 onion, sliced
- 2 tbl. chopped basil
- 2 garlic cloves, crushed
- 1 green chili, chopped
- 2 1/2 cups veg. stock
- 1 1/2 cups passata (sieved tomatoes)
Instructions
- Put bell peppers, onions, garlic and chili in saucepan. Add passata& veg stock and bring to a boil, Stir well.
- Reduce heat and simmer for 20 minutes, until peppers have softened.
- Strain out the vegatables, and keep the liquid in the pan.
- Press the cooked veggies through a strainer or process smooth.
- Return the veg paste to the liquid and add basil. Heat until hot again, serve topped with basil.
