    List of Ingredients


    • 1 tbl oil
    • 2 cup carrots, sliced
    • 1 onion, sliced thin
    • 3 garlic cloves, sliced
    • 2 tbl curry powder
    • 1 tsp cumin
    • 1/2 tsp hot spices
    • 1/2 tsp tumeric
    • 4-5 potatoes, quartered
    • 8 oz green beans
    • 3 cup drained chickpeas
    • 1 cup diced tomatoes
    • 2 cup vegetable stock
    • 1/2 cup peas
    • 1/2 cup coconut milk


    Instructions


    1. Saute carrots and onion for 3-4 minutes.
    2. Add garlic, curry powder, cumin, hot spices & tumeric; keep on cooking for about 2 minutes more or until spices are fragrant.
    3. Next, remove vegetables from the pan & transfer to the slow cooker.
    4. Add potatoes, green beans, chickpeas, tomatoes & vegetable stock.
    5. Cover & cook on low for about 5 1/2 hours. Finally, add in the peas and coconut milk; cook for another 15 minutes.
