    Parmesan Roasted Acorn Squash

    List of Ingredients


    • 1 (2-lb) acorn squash, halved lengthwise, seeded & cut into 3/4-in thick slices
    • 1/4 cup grated parmsean cheese
    • 8 sprigs fresh thyme (1 tsp dried)
    • 3 tbl oilive oil
    • 1/2 tsp salt
    • 1/4 tsp black pepper


    Instructions


    1. Preheat oven to 400 degrees
    2. Toss squash with remaining ingredients until evenly coated. Arrange in single layer on rimmed baking sheet.
    3. Roast for about 20 minutes, then flip and roast other side for 10 more minutes until browned and tender.
