Avocado Cream Terrine

- 2 ripe avocados
- 4 tbl cold water
- 2 tsp veg gelozone
- 1 tbl lemonjuice
- 4 tbl mayo
- 2/3 cup light cream
- Salt & Pepper
- 2/3 cup thickened, unsweet yogurt
Instructions
- Peel avocados adnremove pits. Put flesh in a processor with water, gelzone, lemon, mayo, yogurt and cream. Season with salt and pepper.
- Process 10-15 sec until smooth.
- Transfer to small saucepan, heat gently until just boiling.
- Pour mix into 3 1/2 cup storage box or terrine. Smooth top. Cool and set, about 2 hours.
- Turn out and slice. Garnish with cucumbers.
