Spinach Phyllo Baskets

List of Ingredients
- 3 cup fresh spinach, chopped
- 2-4 scallions, trimmed & chopped
- 1 garlic clove, crushed
- 2 tbls grated Parmesan cheese
- 3/4 cup grated sharp cheese
- Pinch Allspice
- 1 egg yoke
- 4 sheets phyllo
- 2 tbl butter, melted
- Salt & Pepper
- Scallions to garnish
Instructions
- Boil spinach for 3-4 minutes. Drain thoroughly. Remove excess liquis, chop.
- Add scallions &garlic, cheese, allspice, egg yolk and seasoning. Mix well.
- Grease muffin pans.Cut phyllo into 8 pieces & brush with butter.
- Place 4 pieces of phyllo in the dish at angles so each corner is differently placed. Repeat with seconddish.
- Spoon spinach into baskets.Bake at 350 for 20 minutes.
