Wicklow Pancake (traditional)
List of Ingredients
4 eggs
2 cups milk
2 cups white breadcrumbs
6 scallions, chopped
1 tablespoon chopped parsley
1/2 teaspoon chopped thyme
1 tablespoon butter
salt and pepperRecipe
Beat the eggs.
Add the milk, breadcrumbs, scallions, and herbs.
Season.
Melt the butter in a heavy pan.
When hot, pour in the mixture and let it set over a slow heat.
When firm on top, turn, and brown on the other side.
This pancake is quite thick.
Cut in 4 sections and serve with a pat of butter on top.
Makes 4 servings
