    Bacon and Ham Cake

    List of Ingredients




    6 medium eggs
    salt and pepper to taste
    1 heaped teaspoon, minced parsley
    bacon drippings
    1/2 cup diced, lean boiled ham

    Recipe



    Beat eggs thoroughly
    Stir in parsley, salt, pepper and ham
    Melt enough bacon drippings (or butter) to cover the bottom of a large frying pan freely
    Gently pour in egg mixture, after giving it a quick beat.
    Fry over moderate heat, till lightly browned underneath, then finish under the grill.
    Cut into wedges and remove with a palette knife to a heated platter.
    Serve with fried tomatoes.

    Serves: 6 persons
