    Stuffed Fillets of Haddock

    List of Ingredients




    2 1-pound fillets of haddock
    1 cup white breadcrumbs
    2 cloves garlic, crushed
    1 tablespoon chopped parsley
    1/2 teaspoon chopped thyme
    1 tablespoon melted butter
    salt and pepper
    1/2 cup cream
    2 cups mashed potatoes
    1 egg (separated)

    Lay a fillet of haddock in a buttered casserole. Make a savory stuffing from the breadcrumbs, garlic, parsley, thyme, melted butter, and seasonings.
    Put this on top of the fish and cover with the second fillet.
    Moisten with the cream.
    Cover and bake in a moderate oven (350 degrees F.) for 15 minutes. Now take out of the oven and cover with the mashed potatoes, to which the yolk and the stiffly beaten white of the egg have been added.
    Return to the oven and brown.
    Makes 4 servings
