Warm King Prawn Salad with Pomelo & Mang
List of Ingredients
60g PLANTA margarine
10 large king prawns
1 pomelo (ripe)
1 fresh mango
2 fresh lime or
2 tbsp lime juice
15g fresh coriander – chopped
1 fresh orange
50g fresh ginger
1 red capsicum – cubed
1 green capsicum – cubed
Salt and pepper to tasteRecipe
Method:
To prepare prawns, discard head and peel shell but retain tail. Marinate with 30g of PLANTA margarine for 10 minutes.
Pan-fry marinated prawns in remaining PLANTA margarine. Set aside.
Slice pomelo into segments. Cut mango into slices.
To serve, place prawns, pomelo segments and mango slices on plate and top with dressing. Garnish with fresh coriander leaves, if desired.
(To prepare dressing)
Squeeze orange and ginger for juice.
Add lime juice and mango cubes to the capsicum and chopped coriander.
Mix all ingredients well.
