Spam Musubi

This is a very popular snack food, which is quick and easy to make. This recipe's origin is from the Japanese. However, the addition of soy sauce and brown sugar is my own invention, which makes it a lot tastier. The wrapper is usually only about a fourth of the finished product, but I like to have it all wrapped up in the roasted seaweed.
1 can spam
2 sheets of Sushi Wrapper (roasted seaweed)
1 cup Lite Soy Sauce
2 Tablespoon Brown Sugar
1 Zipper type ziploc bag
1 tsp. cornstarch
2 Tablespoon Vegetable Oil or Pam for frying

Cut the spam into 8 even diagonal slices by first cutting in half, then cutting the halves into half. Set aside.
Cut each sheet of sushi wrapper into 2 equal parts width wise. Set Aside in sealed ziploc bag. Exposing the sushi wrapper to air will make it tough to bite through. Make sure to put it in a ziploc bag to prevent this from happening.
In ziploc bag, mix soy sauce and brown sugar. Put in the sliced spam, one at a time. Zip the bag making sure to take out as much of the air as possible. Marinade for at least 2 hours or overnight in the refrigerator. The longer it is marinated the better it will taste.
Take 1 cup of the marinade and mix with cornstarch in small pot. On low heat, cook the mixture, stirring constantly until it is thickened. Immediately remove from heat. Set aside.
In griddle spread the oil or spray Pam to cover cooking surface. Place sliced spam on hot griddle heated at about 250 degrees. Cook each side for about 3 mins. Put cooked spam into cornstarch mixture. Place just enough so that the spam does not over lap. Note: Coat only the underside of each spam with mixture.
Put some cooked rice into a bowl. In a small bowl put in some water. You will use the water as a sealer for the ends of the sushi wrapper. Press about 3 tablespoons of cooked rice into the sushi mold, or make a rice ball then flatten the rice into a rectangle. Pressing until it is about the size of the sliced spam.
Place one coated slice of ham onto the top of the pressed rice. Take one strip of sushi wrapper and center the layered spam and rice under the wrapper. Pick up the layered spam with the wrapper and press one end to the rice. Wet the other end slightly with water, then press down on the other end.
Spam Musubi is favorite to bring to picnics, tailgate parties and served as appetizers. It is a favorite of the children and most times would prefer it to hotdogs or hamburgers.
