    2 shallots, very finely minced
    2 Tablespoons vegetable oil
    2 Ounces crumbled bleu cheese
    1-1/2 Cup buttermilk
    1/2 Teaspoon salt
    12 Cups mixed baby greens (mesclun mix)

    Recipe



    Combine all ingredients except greens and whisk until smooth or blend at low
    speed. Chill. When ready to serve, put 2 cups greens on each salad dish and
    top with dressing.
