Pineapple Upside Down Cake

I have had this recipe forever and decided to try something new. This is the moistest cake! It is really good.
List of Ingredients
1/4 cup butter
8 1/4oz can pineapple
1 1/4 cup unsifted flour
2 teaspoons baking powder
1/3 cup soft shortning
milk
1/3 cup packed brown sugar
4 marichino cherries, 1/2ed
3/4 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla
Recipe
In a dish melt your butter in the microwave to melt. Pour into the bottom of an 8" round cake pan (that you have sprayed generously with pam or the like) and sprinkle the brown sugar over it. Drain pineapple, saving liquid and arrange in the dish. Decorate with cherries. In small bowl, place flour, sugar, baking powder, salt, soft shortening, egg, and liquid (1/2 cup milk/pineapple juice-to your liking) and vanilla. Beat 3 minutes on lowest mixer speed, scraping bowl constantly for the first 1/2 minute. Carefully spread batter over fruit in dish. Bake at 350 for 35-40 minutes or until brown on top and toothpick comes out clean. Let sit 5 minutes and flip onto a cooling rack.
********I used 1/4 cup soy milk and 1/4 cup pineapple juice.
********I didn't have any cherries, but it was fine without
