Easy Winter Potatoes

List of Ingredients
- 4 medium red potatoes, cut into bite-size pieces (about 4 cups cut-up potato)
- 1/2 small onion, cut in half and then sliced
- 1/4 cup olive oil
- 2 Tbsp. dijon mustard
- 1 tsp. crumbled dried oregano leaves
- 1/2 tsp. seasoned salt
- freshly ground black pepper, to taste
Instructions
- Preheat oven to 375 degrees F.
- Cut a piece of heavy-duty aluminum foil 18x24 inches; spray foil with dairy-free non-stick cooking spray.
- Layer potatoes and onion in middle section of prepared foil.
- To make sauce, place remaining ingredients in a small jar and shake to combine. Drizzle sauce over potatoes and onion. Gently stir to coat.
- Bring up sides of foil and double fold. Double fold ends to form one large foil packet, leaving room for heat circulation inside packet.
- Place packet on baking sheet. Bake for one hour. Serve hot.
