Green Mussels-Sushi Bar style
List of Ingredients
GREEN MUSSELS---4 to 6 per person (available year round frozen andwill thaw quickly in cold water)
KEWPIE MAYONNAISE---Japanese mayonnaise available in most asian markets.
ORIENTAL CHILI SAUCE---available in squeeze bottles at any grocery store.
CAPELIN ROE---can be left out of recipe if unable to locate

Remove mussels from shells and set aside. Clean and dry shells and place them on a small baking sheet or metal plate or any oven safe dish or platter.
Dry off mussels and dice them. ( I slice then in half lenthwise--then then cut the halves into 3 sections)
Place mussels in small bowl and add enough Kewpie Mayo to coat them well--before mixing ad a drop or 2 of the chili sauce---then mix.
Distribute the mixture onto the mussel shell halves.
Very finely chop green onions and sprinkle on top of mussell mixture.
Use capelin roe frozen or it will be mushy. Apply a small amount atop each mussel mixture. A butter knife works well. Do not add too much.
Place in oven--(toaster ovens are very convenient) . Bake approximately 5 minutes untl mixture is warmed through.
CAUTION: Chili sauce is very hot so use according to taste--a little goes a long way.
NOTE: These mussels are extremely quick and easy to fix.
