    Truffled Grilled Chicken

    Just another of a multitude of recipes for chicken---easy & delicious--and if you have truffle oil or want to try it--this is perfect for you! Read recipe through--I'll give you mushrooms first then chicken but they can be done simultaneously of course.


    List of Ingredients


    • Chicken breasts--1 per person
    • 1 tablesoon olive oil per breast
    • 2 drops liquid smoke per breast
    • 3 to 4 medium to large mushrooms per serving
    • olive oil--enough to coat bottom of skillet to sautee mushrooms
    • salt & pepper
    • finely crushed garlic less tha 1/8 tsp per serving
    • white truffle oil


    Instructions


    1. Clean and slice mushrooms to your preference. NOTE: use clean towel, paper towel or brush--do not wash mushrooms
    2. Add olive oil to sautee pan--enough to coat bottom of pan well--but not heavily --add a small amount of very finely minced or crushed garlic (for this recipe jarred works just fine)

    3. Heat oil to medium high-add mushrooms and immediately add salt and pepper to taste---fresh ground pepper is always preferable
    4. Brown mushrooms stirring once or twice until golden brown--turn heat to very low or transfer to low heat oven to keep warm
    5. Pound chicken breast if desired---make sure all servings are somewhat uniform in thickness--thickness makes no difference in recipe --it will just vary cooking time
    6. Season chicken with salt and pepper--I always recommend fresh ground--and recommend kosher or sea salt
    7. In small dish pour approx. 1 tbsp olive oil and 2 to 3 drops of liquid smoke per serving
    8. Blend together with pastry brush and brush both sides of chicken--let set in fridge for 15 to 30 minutes ( more time is ok too)
    9. Heat grill or grill pan to medium high and cook chicken till done but DoNot overcook or chicken will be tough and dry
    10. Plate chicken--top with mushrooms
    11. Drizzle with white truffle oil over mushrooms and chicken


    Final Comments


    If you have never tried truffle oil the nuance of flavor it adds is incredible. It seems pricey but in as minute a quantity as if ever used it is not at all pricey! That is one reason for the small quantity of garlic called for in recipe--I didn't want anything to overpower the flavor of the truffle oil and this recipe turned out just right--try it with my Mizithra Pasta.
