    Calamari Steak

    Calamari steaks can be quite a treat--easy to prepare and very reasonably priced. This is one of my favorite ways to prepare this delicacy.


    List of Ingredients


    • Frozen calmari steaks--thawed
    • 1 to 2 eggs for egg wash
    • Panko bread crumbs or regular if preferred
    • 1/8 to 1/4 lemon
    • Sliced almonds
    • White wine--whatever you are drinking no cooking wine please
    • Olive oil or oil sauteeing oil of preference
    • pat of sweet butter--(may easily be omitted)
    • salt and pepper


    Instructions


    1. Prepare you egg wash by whipping you egg with water, salt and pepper in a shallow dish which will allow you to coat your calamari
    2. Dip your calamari into the egg washDcoating both sides
    3. Continue by coating both sides of the calamari with the bread crumbs. press in a bit.
    4. Preheat your oil in medium to medium high fry or sautee pan--(preferably a non stick)
    5. Sautee calamari till golen brown on each side --approximately only 2 to 3 minutes per side.
    6. Remove calamari from pan and keep warm.

    7. Pour off excess oil. Lift pan from burner and deglaze with white wine. (deglaze is the fist step in creating a sauce by adding a liquid to the hot pan to lift the flavors and browning in pan.)
    8. Add pat of butter and almonds (almonds can be slightly toasted in dry pan prior to adding--or use as is) add salt and pepper to taste.
    9. Allow the sauce to reduce a little and add a small squeeze of lemon per serving.
    10. Pour sauce over calamari after plating.


    Final Comments


    NOTE: Panko are japanese style bread crumbs that have found favor among many chefs due to their light crunchy nature. They are largely available in most supermarkets in the oriental section.

    VARIATIONS: Use italiam seasoned bread crumbs--sautee and top with with your favorite marinara or tomato based sauce. Serve with pasta!

    Crush corn chips for coating and top with warmed salsa or a fresh pico de gallo.
