    Wilted Spinach Salad

    Spinach salad is often overlooked and is a wonderful besides healthy alternative to other greens--even if you don't like cooked spinach --how good it is as a salad might just suprise you! Also spinich is one of your least expensive salad greens.


    List of Ingredients


    • Bacon--2 to 3 strips per side serving salad
    • Spinach--packaged baby spinich is the most tender and saves washing
    • Bermuda (red) onion
    • Hard boiled egg-about 1/2 to 1 per serving depending on size
    • Salt and fresh ground pepper
    • Balsamic Vinegar--slight bit more than bacon oil
    • Sugar 1/4 tsp or so per serving
    • splash of brandy per serving


    Instructions


    1. Dice bacon and render over low medium heat
    2. Remove rendered bacon bits and drain --leaving bacon fat in pan
    3. Just before serving time--reheat oil to medium high
    4. In bowl add thinly sliced red onion and chopped hard boiled egg to spinach as well as rendered bacon bits
    5. Lower heat and lifting pan from burner add balsamic to portion just slightly more than amount of oil and return to burner.
    6. Add sugar to taste--about 1/4 tsp per 1 1/2 tbsp oil Salt and pepper to taste
    7. Finally add a small amount of brandy bring to boiling point and turn off heat
    8. Add enough dressing to salad to to coast well--toss and cover bowl for a couple minutes-to allow some wilting of spinach from heat Note: salad will stil be crispy


    Final Comments


    Slightly larger serving with bread or some othe side makes a wonderful light summer dinner or brunch or anytime lunch. For those who shy away from bacon fat--you can do the recipe and use only a samll amount of the bacon rendering fat and replace the rest with olive oil--it's still very good--but for the ultimate flavor jolt use the bacon fat.
