    Calabacitas II (Mexican Vegetables)

    List of Ingredients


    • 1 1/2 lb. Zucchini Squash
    • 1 med. Onion, chopped
    • 2 tbs. Vegetable Oil
    • 2 cloves Garlic, minced
    • 1 1/2 c. Canned Tomatoes, drained
    • 2 tsp. Cumin Seeds
    • 2 Hot Chili Peppers
    • Salt to Taste


    Instructions


    1. Wash squash and cut into 1-inch cubes.
    2. Saute onion in vegetable oil until clear.
    3. Add squash and remaining ingredients, and bring to a boil.
    4. Reduce heat to simmer, and cook until done, about 15-20 minutes.


    Final Comments


    VARIATION: Brown 1 lb. ground beef and pour the mixture over top, and sprinkle with shredded Cheddar cheese and put in the oven until cheese is melted.
