Calabacitas II (Mexican Vegetables)

List of Ingredients
- 1 1/2 lb. Zucchini Squash
- 1 med. Onion, chopped
- 2 tbs. Vegetable Oil
- 2 cloves Garlic, minced
- 1 1/2 c. Canned Tomatoes, drained
- 2 tsp. Cumin Seeds
- 2 Hot Chili Peppers
- Salt to Taste
Instructions
- Wash squash and cut into 1-inch cubes.
- Saute onion in vegetable oil until clear.
- Add squash and remaining ingredients, and bring to a boil.
- Reduce heat to simmer, and cook until done, about 15-20 minutes.
Final Comments
VARIATION: Brown 1 lb. ground beef and pour the mixture over top, and sprinkle with shredded Cheddar cheese and put in the oven until cheese is melted.
