    Kentucky Pie

    Recipe Introduction

    A classic Kentucky dessert.

    List of Ingredients

    1 cup sugar
    1/4 cup cornstarch
    2 eggs, beaten
    1/2 cup butter, melted
    2 tablespoons bourbon
    1 cup finely chopped pecans
    1 6 oz. package chocolate chips
    1 9" unbaked pie shell
    Bourbon flavored topping [recipe follows]

    Recipe

    Preheat oven to 350 degrees. In a small bowl, combine sugar and cornstarch. Stir until well-blended. Add beaten eggs. Stir to blend. Add melted butter, bourbon, pecans and chocolate chips. Stir until blended. Pour into pie shell. Bake 45 to 50 minutes. Cool 1 hour. Serve warm, topped with bourbon flavored topping. Makes 1 9" pie.

    Bourbon flavored topping: 1) Mix 1 cup non-dairy topping with 1 tablespoon bourbon, or to taste. 2) Or add 1 to 2 teaspoons of bourbon to lightly sweetened whipped cream. Refrigerate until ready to use.
