Peppermint Pinwheels

List of Ingredients
- 3 Cups Flour
- 3/4 teaspoons baking powder
- 1/4 teaspoons salt
- 1 Cup unsalted soft butter
- powdered sugar
- 3oz unsweetened chocolate squares
- 1 teaspoon vanilla
- 1 teaspoon peppermint extract
- 1/2 Cup crushed candy canes
- 1 Cup sugar
- 1 beaten egg
- 1 Tablespoon milk
Instructions
- Make Sugar Cookie Batter First:
- Sift together flour, baking powder and salt - set aside.
Place butter and sugar in large bowl and beat until light in color.
- Add milk and egg and continue beating on low speed. Gradually add flour, beat until dough pulls away. Divide the dough in 1/2
- Add chocolate and vanilla extract to 1 of the halves. Incorporate with hands.
- Add egg yolk, peppermint extract and crushed candy cane to the other half. Cover both with plastic wrap and chill for 5 minutes.
- Roll out separately to 1/4 inch thick. Place the peppermint dough on top of the chocolate dough (on wax paper) and press together.
- Use wax paper underneath the dough to roll into a log shape. Wrap in wax paper and chill for 2 hours.
- Remove from fridge. Cut into 1/2 inch slices.
- Place 1 inch apart on greased sheet. Bake 12-13 minutes at 375 degrees. Let sit for 2 minutes, then move to a cooling rack. Makes 3 dozen
