2 eggs, slightly beaten
1/4 cup sugar
1 tablespoon vanilla extract
Juice and grated rind of one lemon (or dayap)
2 ripe mangoes, peeled and chopped
1 1/2 cups heavy cream
3 cups full cream milk
Sliced strawberries or kiwis, for garnish
Recipe
1. In a blender or food processor, combine eggs, sugar, vanilla, dayap juice and rind, and chopped mangoes and process until smooth. In a large bowl, whisk together cream and milk. Add slowly to mango mixture, whisking constantly. Chill well.
2. To serve, stir and ladle into soup bowls and garnish in center with strawberries or kiwis.
