Roast Chicken w/ Herb Cheese & Lime

- 4 lb chicken
- 1 lime
- 4 oz cream cheese w/ herbs & garlic
- 1 mild fresh red chili, seeded & finely chopped (optional)
Instructions
- Preheat oven to 400 degrees.
- Seperate skin from meat across the breast and top of legs.
- Grate the lime and beat rind into cream cheese together with chopped chili. Pack the cream cheese stuffing under the skin, using a teaspoon until evenly distributed. Push the skin back in place then smooth hands over to spread stuffing in an even layer.
- Place chicken in a roasting pan and squeeze lime over top.
- Roast for 1 1/2 hours in 400 degree oven. If necessary, cover with foil towards end of cooking time if top starts browning too much.
