    Roast Chicken w/ Herb Cheese & Lime

    List of Ingredients


    • 4 lb chicken
    • 1 lime
    • 4 oz cream cheese w/ herbs & garlic
    • 1 mild fresh red chili, seeded & finely chopped (optional)


    Instructions


    1. Preheat oven to 400 degrees.
    2. Seperate skin from meat across the breast and top of legs.
    3. Grate the lime and beat rind into cream cheese together with chopped chili. Pack the cream cheese stuffing under the skin, using a teaspoon until evenly distributed. Push the skin back in place then smooth hands over to spread stuffing in an even layer.
    4. Place chicken in a roasting pan and squeeze lime over top.
    5. Roast for 1 1/2 hours in 400 degree oven. If necessary, cover with foil towards end of cooking time if top starts browning too much.
