Grandma Betty's Chile Relleno casserole

List of Ingredients
- 4 ----- 4oz cans ortrga whole green chilies
- 1 lb cheddar cheese
- 1 lb jack cheese
- 1----- 13oz can evaporated milk
- 4 eggs
- 2----- 4 oz can or jar salsa
- 3 TBSP flour
Instructions
- wash green chilies and remove seeds
- lay 1/2 chilies flat on bottom of 12x8 caserole dish
- top with layer of 1/2 of the cheese slices
- then layer the rest of the chilies and top with remaining cheese
- seperate the egg whites from yolks
- add the yolks to the evaporated milk,flour,salt & pepper and mix
- beat the egg whites until fluffy and fold into the yolk mixture and pour over the top of the caserole
- bake at 350 degrees for 1 hour
- top with with salsa and bake for 1/2 hour longer
Final Comments
this reciepe serves6-8 and could also be cut in half for smaller servings
