List of Ingredients
- 4 medium tomatoes; 3 juiced, seeded and chopped; 1 chopped
- 1/2 sweet onion, chopped
- 2 Tablespoons olive oil
- 1 teaspoon dried, or 2 Tablespoons chopped fresh oregano
- 1/4 teaspoon dried or 1 Tablespoon chopped fresh basil
- 1/2 teaspoon dried or 2 teaspoons chopped fresh parsley
- 1 teaspoon chopped garlic
- 1 loaf cocktail size sourdough bread
- 1/4 cup freshly grated parmesan cheese
Instructions
- Preheat oven to 400.
- In a medium bowl, combine tomatoes, onion, olive oil, spices, and garlic. Place bread on a baking sheet, and top with tomato mixture. Sprinkle with cheese
- Bake for 8 - 10 minutes, or until cheese is melted and bread if golden brown. Cool slightly before serving.
Final Comments
This recipe can also be served cold. Simply mix all ingredients except cheese and bread. Place in a serving bowl and serve with toasted bread or crackers. The cheese is eliminated when served cold.
