Rhubarb Pie

List of Ingredients
- Filling:
- 4 cups chopped rhubarb
- 1 1/2 cups sugar
- 6 Tablespoons flour
- 1/4 teaspoon salt
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 3 Tablespoons butter, cut up into small cubes
- Crust:
- See Easy Pie Crust for a two crust pie
Instructions
- Preheat oven to 425. Prepare Easy Pie Crust for a two crust pie. Set aside.
- Combine all ingredients except butter in a large bowl. Mix well. Let stand for 15 minutes. Mix well again.
- Place bottom pie crust in pie pan. Fill bottom pie crust with rhubarb mixture. Dot with butter.
- Place top crust on pie. Flute and cut ventilation holes.
- Bake at 425 for 15 minutes. Reduce heat to 350 and continue baking for 30 - 40 minutes, or until crust is golden brown and filling is hot and bubbly. Let stand for 15 minutes before cutting.
