    Date Nut Roll

    List of Ingredients


    • 2 1/2 cups sugar
    • 1 cup whole milk
    • 2 Tablespoons butter
    • 1 cup choppd nuts
    • 1 lb pitted dates, chopped
    • 1 teaspoon vanilla extract


    Instructions


    1. Bring sugar, milk and butter to a boil. Cook to a soft ball stage, or 235 degrees on a candy thermometer. Add the nuts, the dates, and the vanilla. Beat until the mixture is stiff.

    2. Pour mixture onto a wet tea towel or a buttered piece of wax paper. Roll into a long log. Let cool for 1 hour. Place in the refrigerator and let rest overnight. Slice and serve.



    Final Comments


    I have made some revisions to this recipe since it was first posted. If you looked before Dec. 27, 2002, please note the changes. Less sugar and butter, and I added vanilla. I also omitted the second boil.
