    Grandpa Keeling's Ham & Beans

    List of Ingredients


    • 16 ounces of navy beans (approx. 2 cups)
    • 3 quarts of cold water
    • 1 - 2 lbs salt pork - cut into 1 inch pieces
    • 1 teaspoon salt
    • 1 teaspoon onion powder
    • 1 teaspoon celery salt
    • 1/2 teaspoon white pepper
    • 3 whole bay leaves
    • 1 teaspoon baking soda
    • 1 - 2 cups cubed ham (optional)


    Instructions


    1. Wash the beans and throw away the black ones.

    2. Place beans in a large stock pot and add the water. Place on high heat and add the remainder of the ingredients. If you choose to add cubed ham, now is the time.

    3. Bring to a boil and reduce heat to low. Simmer for approx. 3 1/2 hours or until the beans are just done, NOT mushy. At this time you can cut the meat off the salt pork and shred to mix into the bean soup mixture.



    Final Comments


    Grandpa always served this over fresh baked cornbread, topped with chopped onions and a little cider vinegar. One of my favorite foods.
