    Pear Ginger Brunch Cake

    2 fresh ripe pears
    3 tbs. butter
    1/2 c. packed brown sugar
    1 teaspoon ginger
    1 teaspoon grated lemon peel
    1 teaspoon grated orange peel
    1/4 cup melted vegetable shortening
    (or vegetable oil)
    1 egg
    1/2 cup milk
    1 1/2 cups flour
    1/2 cup sugar
    3/4 teaspoon salt
    1 1/2 teaspoons baking powder

    Preheat oven to 350 degrees. Halve and core pears. Cut into wedges.
    Melt butter in the bottom of an 8-inch round cake pan. Arrange pear
    wedges over bottom of pan in a spiral design. Combine brown sugar,
    ginger and peels. Sprinkle half the mixture over the pears. Beat
    together shortening, egg and milk. Sift together flour, sugar, salt
    and baking powder. Add to egg mixture, stirring just until blended.
    Spread batter over pears. Sprinkle remaining brown sugar mixture over
    top of batter. Marble through batter with a knife. Bake for 25 to 30
    minutes. Let stand 5 minutes before inverting cake onto a plate.
    Serve warm.
