FOR BARS:
2 cups flour
1-1/2 cups sugar
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/4 teaspoon salt (Aly used a little more)
1/4 teaspoon ground clove (Aly used a little more
and ground it from whole cloves)
2 cups canned pumpkin (Original recipe called for
1 15-ounce can -- about 1-3/4 cups)
1 cup vegetable oil
4 beaten eggs
1 cup chopped walnuts (optional)
FOR FROSTING: (Original recipe called for cream cheese frosting)
1 pound powdered sugar
1/4 cup soft butter
2 teaspoons vanilla

Recipe
In a mixing bowl, stir together flour, sugar, baking powder, cinnamon,
baking soda, salt and cloves. Stir in pumpkin, cooking oil and eggs
till thoroughly combined. Then, stir in walnuts if you want. (Aly
didn't.) Spread batter into an ungreased 9-by-13-inch baking pan.
(Original called for 15-by-10-inch pan). Bake in a 350-degree oven
for 25 to 30 minutes or till a toothpick inserted near the center
comes out clean. Cool in pan or on a wire rack.
For frosting, combine powdered sugar, soft butter and vanilla with a
wooden spoon until smooth. Add milk, a little at a time to reach
desired consistency. Frost top and cut into bars.
Per serving: 170 calories, 1 g protein, 24 g carbohydrates, 9 g fat, 5
mg cholesterol, 40 mg sodium, 1 g fiber. Calories from fat: 47
percent.
