Baked Stuffed Apples

4 large cooking apples, cored
1/4 c packed brown sugar
1/4 c dried cranberries
1/2 c cranberry or apple juice
2 Tbsp butter, melted
1/2 tsp ground cinnamon
1/4 tsp freshly grated nutmeg
chopped walnuts or pecans (optional)Recipe
Fill the apples with the brown sugar, and cranberries and place them in a slow cooker. Combine the cranberry juice and butter and pour over the apples. Sprinkle with cinnamon and nutmeg and cook covered on low until the apples are tender, 4 to 6 hours. Spoon the sauce over the apples and garnish with chopped nuts if desired. Serves 4.
