    2 boneless skinless chicken breast halves, cut into 1-inch cubes (easy to cut when partially frozen)
    6 ounces Roma tomatoes, chopped
    1/2 red bell pepper, seeded, de-ribbed and chopped
    1/2 cup onion, chopped
    1 tablespoon raisins
    1 tablespoon tomato paste
    2 tablespoons chicken broth
    1 1/2 cloves garlic, pressed
    1 teaspoon ground cumin
    1 tablespoon peanut butter

    Recipe



    In a skillet, brown chicken pieces well on both sides.



    Place tomatoes, bell pepper, onion, raisins, tomato paste, garlic, chicken broth and cumin in a crock pot. Mix until well combined.

    Place chicken on top of this mixture. Cover. Cook on low heat setting 6-7 hours, or until chicken is tender. Stir in peanut butter.

    SERVING SUGGESTIONS: Serve over couscous and add steamed cauliflower and follow above serving suggestions as well.
