    1 lb medium red potatoes, quartered
    1/2 lb baby-cut carrots
    3 lbs boneless beef chuck roast, trimmed of excess fat
    3 Tbsp dijon mustard
    2 Tbsp chopped fresh rosemary
    1 tsp chopped fresh thyme
    salt and freshly ground pepper
    1 onion finely chopped
    1 1/2 c beef stock

    Recipe



    Place the potaotes and carrots in the slow cooker. Mix together mustard, herbs, salt and pepper spread over the beef. Place the beef in the slow cooker, sprinkle the onions over the beef, and add the beef stock. Cook covered on low until the beef is tender, 8-10 hours. Transfer beef and vegetables on serving platter. Skim the fat off the remaining liquid and ladle the liquid over the beef. Serves 6-8.
