    this is a great summertime dessert.

    List of Ingredients




    2 pints of vanilla ice cream (get high quality ice cream like Edy's)

    1 Mrs Smith's Authentic Key Lime Pie

    2 c coconut

    1 1/2 c chopped macadamia nuts

    Recipe



    Soften two pints of vanilla ice cream (good ice cream, i.e. Edy’s) in a big bowl.

    Dump in a thawed Mrs. Smith's Authentic Key Lime Pie (crust and all)

    Stir the two together and dump into a large pan (13x9 works fine)

    Cover and freeze

    (I did this step the night before)

    Scoop ice cream/pie combo into whatever size balls you desire (if mixtures becomes too soft, refreeze for an hour or two and then start the process again)

    Roll balls in toasted coconut and macadamia nuts

    Place in container, cover and freeze


    Toasted Coconut and Macadamia Nuts

    Mix together about 2 cups of coconut and about 1½ cups of chopped macadamia nuts (I bought them already chopped, but chopped them even more fine because I didn't want big chunks of nuts)

    Spread them out on a large shallow pan and toast about 9-11 minutes at 350 degrees (I set the timer for five minutes, and then checked them every two minutes after that; not hard to do, but one of those things that can get away from you if you’re not careful)

    I also did this the night before and stored in a Tupperware bowl (ziploc bag will work too)


    If you take it somewhere make sure to pack it with lots of ice in a cooler and put in freezer when you get to your destination.


    Simple dessert that tastes marvelous
