Teriyaki Broccoli Beef

1/2 pound round steak, cut in strips
1/2 cup onion, thinly sliced
1/2 tablespoon vegetable oil
3/4 cup beef broth (low sodium/no MSG, if available)
1 tablespoon teriyaki sauce
1/2 tablespoon fresh gingerroot, grated
1/3 cup carrots, thinly sliced
1 cup fresh broccoli florets
Recipe
In a skillet, heat oil over medium-high heat and sauté the beef together with the onions until beef is just barely pink, but browned on all sides. Do not cook all the way through.
Now add broth, teriyaki sauce and gingerroot. Bring the meat and sauce to a boil, and then reduce to a simmer.
Cover and simmer until meat is done, about 10-15 minutes. During the last 5 minutes of cooking time add carrots and broccoli; cover skillet again while it finishes cooking. Serve.
