    1/2 pound penne pasta (or rigatoni if you can't find penne)
    1 tablespoon olive oil
    1/4 cup onion, chopped
    1 1/2 slices turkey bacon, chopped
    3/4 cup part skim milk Ricotta cheese
    3 tablespoons Parmesan cheese
    1/4 teaspoon basil
    1 1/2 tablespoons hot water
    Salt and pepper to taste

    Boil a pot of water and cook the penne until al dente (just done).

    While water is working, heat oil in an 8-inch or larger skillet over medium-high heat and add the onion. Then add bacon and cook till almost crisp. Using a slotted spoon, remove the bacon and onion and place in a large bowl; add the Ricotta; mix all together and add basil, Parmesan and the hot water (scooped from the pasta pot). Stir well and set aside.

    Dump half of your freshly cooked pasta into the ricotta mixture and blend well. Add the remaining pasta and mix again, this time adding a little salt and pepper to taste.

    Per serving: 337 Calories; 9g Total Fat; 15g Protein; 46g Carbohydrate; 23mg Cholesterol; 196mg Sodium Food Exchanges: 2 1/2 Grain (Starch); 1 Lean Meat; 0 Vegetable; 0 Fruit; 1 Fat; 0 Other Carbohydrates.



    SERVING SUGGESTIONS: Steamed broccoli and a big salad should round this out nicely. If you're feeling like pigging out on carbs, go for some garlic bread!



    VEGETARIANS: Omit turkey bacon.
