    List of Ingredients





    4 boneless, skinless chicken thighs (or breasts)
    flour for dredging
    6 TBS. butter (I use 1/2 butter, 1/2 extra virgin olive oil)
    1/2 C. white wine
    1/4 C. chicken broth
    1/4 C. chopped parsley (fresh, of course!)
    3 TBS. drained capers
    Juice of 1/2 lemon
    Salt and pepper, to taste

    Recipe



    Flatten chicken with mallet. Dredge chicken in flour. Melt butter in
    skillet over medium heat. Add chicken and cook until lightly browned
    on both sides. Add wine, broth and parsley. Season w/ salt and
    pepper. Cover and cook on low heat for 8-10 minutes. Add capers and
    lemon juice. Garnish with lemon slices. Serve immediately. YUM!
